I have always been a huge fan of lentils. They have been my go-to dish for years. I’m always looking for new ways to prepare them! There is something about lentils that brings me great comfort, especially during the colder months.  In addition, lentils are inexpensive and easy to find at the local grocery store or online retailers (Amazon).  I created this recipe during law school when my time, patience, and energy were limited.
If you know me, I love a flavorful dish. The curry powder delivers a big kick and is essential in bringing out the flavor of the lentils and sweet potatoes. My favorite curry powder at the moment can be found on Amazon in both Mild and Hot.Â

What are Lentils?
Lentils are an ancient food dating back to the Bronze Age. The lens-shaped food is an edible legume. The majority of the world’s production of lentils come from Canada and India. Â
Lentils come in a variety of colors: brown, green, black, red, yellow, and orange. Â Without a doubt, brown, red, and green lentils are my favorites!Â
What are the benefits of lentils?
Lentils are packed with nutrients that can aid you in living a healthier life. Lentils can serve as a great source of B vitamins, zinc, magnesium, potassium, selenium, and iron. Such ingredients are important in maintaining energy levels, decreasing the risk of heart disease, and preventing cancer. Â
Because lentils contain high amounts of protein, they can serve as a great meat alternative. Lentils are also high in fiber and can aid in providing regular bowel movements. Â
Lentils also contain folic acid. It is well known that folic acid is one of the most important nutrients during pregnancy. With regular consumption of lentils, pregnant women can have a healthy overall pregnancy and baby.Â
If you ask any weight loss expert, they will tell you that lentils can help you achieve your weight loss goals. One cup size of lentils contains under 250 calories! Because lentils are packed with fiber, you don’t need to consume a lot and you can remain full throughout the day. This is great for preventing unhealthy snacking!

Curried Lentil Soup With Sweet Potatoes

I enjoy serving the lentils with rice (brown, white, basmati, or jasmine) or quinoa. This dish also tastes fabulous with naan!
The lentils taste great as leftovers, especially after the spices have settled in.
The dish freezes well so you and your family can enjoy the dish weeks later!
Ingredients
- 1.5 cups of dried brown lentils (soaking optional)
- 1 large onion, chopped
- 4-5 small to medium-sized sweet potatoes, peeled and chopped into small cubes
- 32 oz vegetable broth
- 1 tsp of butter or coconut oil
- 2 vegetable bouillon cubes
- 1 tsp Garlic pepper
- .5-1 tsp Curry Powder (more or less for your liking)
- Dash of Salt (to your liking)
- Sprinkle of Paprika
- Optional: 1 tsp of honey
- Optional: 1/4 cup of almond or coconut milk
Instructions
- Soak the lentils. This is optional, but I usually like to soak mine for about 2-6 hours.
- Rinse and cleanse the lentils with water.
- In a large pot, add butter or coconut oil. Heat oil on medium heat. Add onion and sweet potatoes. Cook and stir until onion is tender.
- Add vegetable broth and bouillon cubes. Bring to a boil.
- Add rinsed lentils.
- Add and stir in garlic pepper, curry powder, paprika, honey, and salt. Season to taste. Add milk for a looser texture or to tone down spices.
- Simmer on medium heat until lentils and sweet potatoes are tender. I usually cook the lentils for about 20-25 minutes.
